Overnight Oats with Bananas and Blueberries

Breakfast is THE most important meal of the day, if like me you are stuck for time, check out these ten breakfast recipes in less than 20 minutes, or maybe at the weekend when there’s a little more time an awesome breakfast casserole, but if you are SUPER organised how about these fabulous Overnight Oats.

Overnight Oats

Serves 8

  

Ingredients:

400      grams                          Rolled oats

1          Litre                             Coconut Milk

500      ml                                Plain Yogurt

100      grams                          Almond Butter

4          Tbsp                              Honey

2          tsp                               Vanilla

2          tsp                               Cinnamon

 

To serve

8          Tbsp                              Plain Yoghurt

8          Tbsp                              Almond butter

3                                              Bananas – sliced

Honey

Other fruit optional, we love to add blueberries

Instructions

  1. Place oats, coconut milk, yoghurt, almond butter, honey, vanilla and cinnamon syrup in a bowl. Stir to combine well.
  2. Divide mixture among 8 x mason jars.
  3. Secure lids. Refrigerate overnight.
  4. When ready to serve top with 1 tablespoon of yogurt, 1 tablespoon of almond butter, sliced banana and a drizzle of honey. Enjoy!
